Pour obtenir une huile \u201cfruit\u00e9 noir\u201d, les olives subissent\u00a0une phase de maturation contr\u00f4l\u00e9e<\/span><\/strong>\u00a0de deux \u00e0 sept jours. C\u2019est l\u2019huile comme on prenait le temps de la produire jadis. Cette \u00e9tape de\u00a0\u201csurmaturation\u201d<\/span><\/strong>\u00a0permet de cr\u00e9er une huile \u00e0 la saveur particuli\u00e8re, caract\u00e9ris\u00e9e par des parfums de champignon, de foin coup\u00e9, avec un ar\u00f4me de fond \u00e9voquant la noisette. Les ar\u00f4mes du \u201cfruit\u00e9 noir\u201d rappellent aussi typiquement l\u2019olive noire.
